Why should you read my blog???

Because I said so! No not really...But reading my blog will hopefully be more entertaining than just sitting at your computer with nothing to do. I like to write about a variety of topics depending on my mood. So be sure to check in since you'll never know what kind of mood I'll be in!

Beefy Cheesy Things...Say what?!?

Hey everybody! It's been a bit since I have posted. But end of the school year gets pretty crazy! Counting down the days until summer begins for us. (June 14th!) I am sooo ready!

So today I thought I would share one of my favorite recipes! I call them Beefy Cheesy Things only because I could not remember what they were called in the magazine I saw it in. And I changed it slightly from the magazine recipe anyway. These are an absolute favorite of my brother and my boyfriend. (both are big football players who love to eat!)

Beefy Cheesy Things are exactly what they sound like. Sorry about the pic. I just took it really quickly with my cell phone before my brother and boyfriend attacked them.

You will need:
  • Ground Beef
  • Bar-B-Que Sauce (I like the hickory kind.)
  • Shredded Cheddar Cheese
  • 2 Cans of Biscuits (generally they come 10 in a can)
  • Cupcake Pan (12 cups) 
1) First you want to brown 1 lb of ground beef and drain very well!
2) While the ground beef is browning, spray the cupcake pan with Pam or some other cooking spray. Take the cans of biscuits and place one biscuit in each of the cupcake holes in your pan. I have only ever been able to find cans of 10 biscuits so to get the 12 I use two cans and then bake the extra biscuits the next day. You could also just use 10 holes.
3) Press the biscuits in the middle and up the sides to form a small bowl in the cupcake pan. They will not go very far up the sides though. Maybe a 1/4 of the way up depending on the size of your biscuits.
4) Mix your drained, cooked ground beef with a cup of Bar B Que sauce. You could use more or less sauce depending on how "saucey" you like it. I have also added a little brown sugar at this step to make it a little sweeter, but this is optional.
5) Spoon the ground beef mixture over the biscuits. You want to almost fill your cupcake pan but leave a little room for the last step.
6) Top with CHEESE! As much or as little as you like.
7) Bake in a pre-heated oven at 350 for 10-12 minutes. You want the cheese on top melted and slightly brown. The bottom and sides of the biscuit should be golden brown.

These are so yummy. Very much a comfort food! And they best part is you really don't have to measure ANYTHING! You can just eyeball it depending on how saucey or cheesy you like it!

  5. Hi! So I made them tonight! They came out yummy... but I didn't have any bbq sauce, so instead I used a can of condensed Campbell's Bean and Bacon soup, which added a nice flavor. :) Every one loved them!!! Thank you so much for sharing :)
